The son of a Tahitian pastor, Heiarii Hoiore has only ever wanted one thing: to bring others joy by cooking for them. After earning his stripes in the south of France alongside the Michelin-starred Pourcel, brothers, Heiarii continued his training by taking the reins at one of Papeete's most well-known restaurants. At 35, he finally achieved his lifelong dream: opening his very own “Hei Restaurant”, where his guiding philosophy is to offer sophisticated, authentic “bistronomy”: in other words, to put a fresh new twist on classic bistro dishes.
Hei has been so successful that ever since it opened, the restaurant – with its deliberately Zen décor – has never once been empty. The secret to this success is undoubtedly its irrefutable simplicity: a single five-course menu that changes on the first Friday of every month. To start, you may be tempted by Little Tahitian shrimp ravioli with a foie gras sauce, followed by Patagonian toothfish – a fish loved by gourmets for its soft, white meat – with braised courgettes, pistachio crumb, and a salty preserved lemon jus. To finish on a high, the “Hei-style” chocolate mousse is a thing of beauty. Regulars will tell you that there is no better restaurant to be found in the whole of Polynesia.
